For shelf-stable preserving, use a tested recipe and its exact processing directions. These manuscript recipes have not been verified as canning schedules. Read USDA preserving guidance ↗

For the proper canning process, we recommend following the Ball company’s water-bath canning method, which you can find at ballmasonjars.com. We use this method to preserve pickled vegetables, jams, and preserves. If you choose not to utilize the canning process, you can store your jams and pickled vegetables in the refrigerator. We use both the canning method and refrigerator storage depending on the quantity of produce we have on hand. When the fig harvest is abundant, for example, we tend to use the canning process to ensure a longer shelf life for our fig jam. Beautiful canned jars of fig jam also make welcomed gifts!
