Pronounced tah-deeg, the word tahdig translates to "bottom of the pot" in Farsi. It comes from the Persian words tah, which means "bottom," and dig, which means "to form." The name refers to the way the dish is cooked. Tahdig is the golden-brown, crispy, flavorful layer of rice that forms at the bottom of the pot. It’s certainly a family favorite in both of our homes!
Tahdig is usually made by cooking rice with a layer of sliced potatoes, bread, or yogurt at the bottom of the pot. When the rice is cooked, the crispy layer is inverted and served on top of the fluffy rice, or broken into pieces and placed around the edge of the rice platter.
The origins of tahdig can be traced back to ancient Persia, where it was considered a delicacy and served to royalty. Over time, tahdig became a popular dish among the common people and is now a staple in Persian cuisine. Tahdig is served during special occasions such as weddings and holidays, and is a beloved dish in Iranian culture. It is typically served with a variety of stews or vegetables, and is enjoyed for its unique texture and delicious flavor.
