Clean barberries
Keep your screen awake while you cook or follow a guide.
Zereshk berries, otherwise known as barberries, are tart dainty red berries that grow on a shrub .Pour the zereshk onto a large plate and carefully pick through to remove any rocks, stems, or leaves.
Pour into a large bowl, fill the bowl with water, and agitate with your hand in a circular motion to wash the zereshk.
Use a tea strainer to remove the zereshk from the bowl, being careful not to stir up the sediment in the bottom of the bowl.
Even if your zereshk looks clean you should still always follow this process, as you don’t want to risk having any sand, sediment, or small stones ending up in your dish!
